chicken curry, philippine-style

haven’t posted in a while. been too busy to cook. but it’s the weekend, so i can putter around my kitchen again 🙂 picked up some chicken at the grocery store yesterday. i wanted to try the southern-style fried chicken recipe i saw on “throwdown with bobby flay.” he’s annoying but his recipes are fairly easy to follow 😛 anyway, there were too many pieces for the fried chicken so i decided to make a small batch of chicken curry for dinner. it is basically just chicken, coconut milk and some curry powder. i’m not my friend T so i don’t make my own mix. i cheat with mccormick’s curry powder. and here it is! paired with smoking hot white rice and a side of patis (fish sauce), it’s finger-lickin’ good (oh remember when we were having dinner at my place in poughkeepsie and you were surprised to see i still ate with my hands? 😛 )

    that looks good! wow, T makes her own curry mix? i wonder what she would say if she tastes this. you didn't put any potatoes and carrots? philippine chicken curry has to have those 😀 again, too little rice 😛

    btw, i was shocked because we were eating beef soup when you used your hands 😀

    oh, and yes, T makes her own curry mix and that's why i'll never share my curry dishes with her, HA HA HA! i mean, c'mon, the girl won't even go near the indian places around here because they're not authentic enough for her. and no, i didn't put potatoes or carrots. i guess it's not really philippine-style then, neh?

    ahhh, makes sense now. yes, of course that has to be eaten with the hands. how would you get the good stuff out of the bone marrow?!?! 😛 i may already be repeating myself but i loved how when i was a kid, the day before the fiesta when all the adults are busy with the cooking and don't really want to wash dishes, they would feed you on banana leaves. there would be nilaga and yet the broth never spills. that's because you “block” it with the rice 😛

    ha.ha. that takes skill. like mixing cement or making dough 🙂 making a well in the middle to put in the liquid, then mixing the solids in slowly. it's very probinsyano, even barriotic, but i never had a problem about eating rice with soup. 🙂 of course you don't get most of the soup, that's why you sip it in the end by lifting the plate or bowl to your mouth 😛
