good thing they had the next best thing, kalderetang kambing! cooked the wrong way, this could be the most atrocious dish ever (remember our discussion about “ango”, that off, minerally taste/aftertaste that comes along with beef, mutton and lamb?). but luring’s is a place that knows how to deal with this (i guess their secret is by using ginger, but i’m not quite sure because i’ve never found a sliver of this as evidence).
i still prefer the kalderetang baka though, if only for the more generous chunks of beef. goat meat tends to be on the lean side, and has got a lot of bones (therefore, less meat).
