apu and corned beef

as a child i was often described as “pihikan (choosy)” when it comes to food (my parents certainly didn’t expect me to grow up with an adventurous palate). it’s a trait i shared with my apu. she was a true carnivore, someone who became melancholy when served with vegetable dishes. i can still picture her, hand under her chin, looking like she just lost her favorite dog when mom served vegetables two meals in a row. one way to cheer her up is to make one of her favorite dishes — corned beef with tomatoes and potatoes. with my grandmother, american canned goods such as libby’s corned beef and hormel’s spam didn’t really get to stay on the display cabinet too long 😛

    she would have complained about the canned corned beef these days, though … the “hibla (fibers)” aren't quite as long anymore.
