remember how aghast you were when you commented on my penchant for adding syrup to sweet potato fries in an earlier post on camote chips? well, here’s finally proof of how good they look, and how better they taste if they’re rolled in thick brown sugar syrup. actually, that’s no longer syrup nor caramel but sugar crunch. (remember panocha, that dessert of hardened molasses, sometimes plain and sometimes with peanuts?).
this comes at a price though (and i don’t mean diabetes). while cooking this a bit of hot brown sugar splattered on my thumb. instant blister. nothing is worse than to be burnt by hot brown sugar.
this camote cue would have been perfect with this typical filipino drink. i don’t know about you, but when i eat camote cue and drink buko juice i am transported back to grade school.
