salmon in pastry sacks

a niece who lives in las vegas came to visit us in NJ this weekend and one of my cousins hosted a dinner for her and her dad. i would have missed the dinner (monday night) if this were a “normal” weekend for me, but i had taken a couple extra days off (needed a longer break after the stresses of the past month). good thing, because i got to enjoy this dish that my cousin’s wife made (thanks again for the lovely evening, kuyang N and ate K!). it’s called salmon in pastry sacks and it’s exactly what you’d imagine from the name. the recipe is from rachael ray — the preternaturally perky food network personality. i actually like her recipes/cookbooks because they are easy to follow. i’m linking to a page of her daily show’s website for the recipe. some of the other dinner offerings are shown below: fettucini alfredo, lamb marinated in mint and the salmon.

    the sacks look delicious. in the second photo, what's that dark think beside the chicken? is that a slice of chocolate cake? i hate including dinner and savory items in the same plate.

    that's lamb. we did have chocolate cake for dessert, though.
