silly me, i thought this cheese spread was uniquely filipino. it’s one of the first things we learned to cook in home ec in high school. then one day, i saw an episode of one of paula deen’s shows on the food network and she was featuring pimiento cheese sandwiches. my jaw dropped! apparently, pimiento cheese is a favorite in the south. one main difference, though. paula used mayonnaise in her recipe. i learned to make this with butter. (really surprised, because ms. deen is notorious for her liberal use of butter). here’s the link to paula deen’s pimiento cheese recipe. and below is how i learned to make it in home ec:
1 kraft cheddar, 250 g
1 anchor butter, 250 g
4 ounces (can or bottle) of pimiento, with juice
salt and pepper, if you like
soften butter to room temperature. grate cheddar. dice the pimiento and get rid of the juice. mix everything together. chill in covered container in refrigerator.
BTW, i actually didn’t make the cheese pimiento pictured above. i saw a small tub at trader joe’s and grabbed it, LOL!
one of the few things i can't stand 🙂 give me cheese, give me cheese spread, but never cheese pimiento 😀

you know, i almost asked. i had a vague recollection of you not liking cheese pimiento 😛 used to hate it, then one day i didn't *shrugs
