bulalo soup


this post was inspired by a rerun of anthony bourdain’s show about everything marrow, and i caught the part where they were snacking on crackers with roasted bone marrow, which looks very similar to what you posted here.

i know we’ve posted a lot on nilagang baboy (pork), manok (chicken), even bulalong lauya, but i can’t believe we haven’t posted one on the classic bulalo soup itself. there are fewer food items in the world as rich and filled with a taste of umami as this dish.


and the best accompaniment is show above… mixed with patis (fish sauce).

    oh, i'd love to scoop up those marrows and just try and shake them loose on top of steaming white rice 🙂 i've been sooooo good about not having any marrow lately. i think you just ruined that, HA HA HA

    so did you go to the store to buy beef shanks? ha.ha. the ones you have there are enormous, and laden with this stuff. (i remember the time you cooked nilaga.)
