oyster omelette


all my attempts on making an oyster omelette as decent as the one in “wok in” resto in the old park square building in makati or as excellent as those found in singapore have so far failed, including the one above. they tend to go soggy and watery. and the egg tastes like scrambled egg more than a spanish fritata (which is the desired omelette consistency). well, gotta keep on trying…
