easy-peasy sandwiches

i’m going through a lazy phase. i don’t want to cook. it’s waaaay too hot to cook (that may change, though. there’s hurricane isaac bearing down on the coast). so i’ve been mostly staying out of the kitchen. or have been fixing myself meals using only the microwave 😛

here’s a chili dog from the leftover chili con carne. had this and a light beer while watching a yankees game that i had recorded on my DVR (yes, i knew the outcome of the game but it was still a lot of fun seeing the home runs). how do you think it compares to this?

this is a chicken sandwich. but not the typical filipino chicken sandwich. (do you remember the chicken sandwiches served at birthday parties when we were kids? sometimes, you could barely find a shred of chicken in them, they were mostly sandwich spread) this is actually a chicken-cranberry-walnut salad that i plunked between two pieces of oat-nut bread 😛 i’ve had versions of it at various restaurants. first time i made one on my own. it was good, but i probably should follow a recipe next time, LOL!
and this is just a humble egg salad — a couple of hard-boiled eggs, a teaspoon of mayo, some parsley and salt. do i correctly remember you saying you don’t like your eggs this way?

ha.ha. gotta laugh about the “chicken sandwich” spread of our childhood where you are left wondering they they called it as such when there wasn't any sliver of chicken 🙂 that one you made looks really delicious! i could almost taste it from here. and yes, i'd rather have a sunny side egg sandwich or a scrambled egg sandwich than an egg salad sandwich. i also don't like boiled egg on any vegetable salad.
