bibingka cupcakes

i woke up today definitely feeling all that shoveling i’ve done in the past couple of days. to perk myself up, i decided to make some mini bibingkas (hey, it’s cold and with all this snow around me, it definitely feels like christmas!). i used the white king bibingka mix i used in this post and just followed the directions. the only change i made is to the amount of sugar. the recipe called for 1/2 cup; it’s too sweet. 1/3 cup should be good enough. i wish they’d make banana liners so it would be more authentic. oh, and i added a cube of cheddar inside each cup 🙂

i saw this tree near work last night and i just had to capture it. reminded me of old japanese paintings i’ve seen in calendars as a kid.
