I was inspired by a cooking show I saw last night about a lechon sandwich and it so happened that I had leftover sinigang pork belly and white bread nearby. I scooped out the pork strips from the sinigang, marinated them in soy sauce, sugar, coriander stalk, crushed garlic and pepper. After an hour or so, I fried them in oil until there was some caramelization on the pork. I spread these on some mayo-laden bread and topped with more coriander leaves. Heaven!
