Chicken in coconut milk with sayote and papaya

20160320_154009I had a craving for tinola but I also wanted something richer and more comforting… so using the same ingredients I made a coconut-based dish instead. The ingredients are:

  • chicken slices
  • ginger/yellow ginger (turmeric)
  • papaya or sayote slices
  • fresh chili
  • chili leaves
  • 1 pack of coconut milk
  • fish sauce to taste
  • garlic
  • onion

First saute the chicken in garlic and onions, then flavor with fish sauce. Add a cup of water and simmer until chicken is cooked. Add the papaya and sayote slices and the coconut milk. Wait until the vegetables are soft but not mushy. Top with fresh chili leaves.

    Huh! Tinola with coconut, works for me! Why do you say pack of coconut milk? They don’t come in cans?
