I love squash. I love in in soups, in stews, in desserts. Except in sports.
Just saute some (ground) pork in onions, garlic and tomatoes, then put some fish sauce. Throw in the veggies (string beans and squash) with some stock or water, and then simmer until pork is cooked and veggies are tender or crisp as per your preference. To add richness I add some coconut milk. This is healthy and hearty and delicious.
