Paratha and hummus

I got really happy yesterday when I stumbled into ready-to-cook parathas in the supermarket. There had been a steady increase in the population of South Asian workers in the area where I live (due most probably to the business process outsourcing industry) so these were available in the supermarket. All you needed to do was to fry this one in a thin film of oil. It gets all crunchy and soft, like a pastry but not as crumbly as a pastry sheet.


I didn’t have time or the ingredients to make a curry but since I had some leftover mashed potatoes with spinach and a can of garbanzo beans (chickpeas) and some curry powder, I made an instant hummus with lots of garlic and a dash of cayenne pepper.

This was utterly delicious.
