There was no recipe in our previous post on tropical chicken so here is our take on it.
- 1/2 kilo chicken breast cut in small pieces
- Garlic, crushed
- Onions, sliced
- 1/4 cup butter
- 1/2 cup cream
- 1 cup cream of mushroom soup base
- 1 cup corn kernels
- 1 cup sliced mushrooms
- 1/2 cup diced carrots
- 1/2 kilo potatoes
- salt and pepper, to taste
Saute garlic and onions in butter. Add chicken and cook until tender. Add vegetables, cream, and mushroom base. Season with salt and pepper and let simmer for 5 minutes until carrots are cooked.
Boil potatoes separately and then drain. Mash and season with salt and pepper. Add cream or milk and butter.
Top over cooked chicken. Bake for 10 minutes. Serve hot.
