noodles in peanut/sesame sauce

i’m not a big peanut butter fan. i mean, i don’t hate it. i can appreciate a good PB&J. but if i’m slathering something on a piece of bread, it most likely won’t be peanut butter. the only reason i have a jar in my pantry is because of kare-kare. a couple of days ago, however, i found myself craving cold sesame noodles. so i started poking around my cookbooks and found this recipe from mark bittman. i had most of the ingredients in my pantry and refrigerator, mostly leftovers from other dishes. i made some very minor changes: i didn’t use cucumber and added shrimp and toasted sesame seeds for garnish. the great thing about this dish is it’s very versatile. you can just stick with the scallions for garnish. or add chicken chunks. or go with tofu, if you’re vegetarian. what will you add?

    yum! i will minimize the peanut butter, add a lot of the cucumber. lots of wansoy/coriander! prawns, crabmet and fresh oysters! chili flakes too! yum!
